Fizz a la Violette $9
This was a popular one last week, and as a result we ran out violette – so here it is again: dry gin, crème de violette, lemon and lime juices, sugar, cream, egg white, club soda, up. This is an Egyptian variation on the Ramos Gin Fizz by Ahmed Soliman, circa 1932.

Flying Fish Cocktail $8
Three parts dry gin to one part yellow Chartreuse, with a little maraschino liqueur and peach bitters, up. From Charles H. Baker, who also documented the Fizz a la Violette above. This one hails from time he spent at a British hill station in Colombo, Ceylon (modern Sri Lanka).

Ian’s Fizz $7
Dry gin, lemon and orange juices, orange curacao, orgeat syrup, and club soda, up. I’m not sure who Ian was, but he came up with a damn tasty fizz! #60.

Irish Fizz $7
Irish whiskey (Powers), lemon juice, a little sugar, orange curacao, and club soda, up. #61.

Silver Ball Fizz $6
Riesling wine, grapefruit juice, a little sugar, orange flower water, egg white, and club soda, up. #62.

Sir Walter Cocktail $8
Light rum (Matusalem) and cognac (Camus VS) with a bit of Grand Marnier, lemon juice, and pomegranate syrup, up. London, 1920s.

Calvados Fizz $9
Equal parts Calvados (French apple brandy) and lemon juice, with a little cream and sugar, egg white, club soda, up. This is a rather tart one.

Cherry Rum Fizz $7
Light rum, lemon juice, sugar, and Heering cherry liqueur, club soda, up.

Crystal Rum Fizz $6
Here’s a funny one… light rum and ginger ale with a piece of mint Life Savers candy, on the rocks. The ice and minute divots in the candy make the bubbles linger.

Danish Gin Fizz $8
Dry gin, Heering cherry liqueur, kirschwasser, lime juice, sugar, club soda, up.

Fern Gully Fizz $7
Dark Jamaican rum (Smith & Cross), mixed with light rum (Matusalem), pineapple and lime juices, club soda, up.

Fizz a la Violette $9
Dry gin, crème de violette, lemon and lime juices, sugar, cream, egg white, up.

Fuzzy Fizz $6
Crème de menthe, cream, club soda, up.

Harvard Fizz $7
Cognac and red vermouth (Carpano), orange bitters, club soda, on the rocks.
